- 1 tub of Vegie Gourmet Chunky Spinach & Garlic Dip
- 1 cup of ricotta cheese
- ½ a cup of grated parmesan cheese
- 1 egg lightly beaten
- 200g of penne pasta
- 500g butternut peeled pumpkin
methods
- Place the pumpkin in a microwave dish, cover with plastic wrap and cook till soften.
- Cook pasta following instruction on pack then drain.
- Combine ricotta, egg and parmesan in a large bowl. Stir in Chunky Spinach & Garlic Dip, pasta and pumpkin into the mixture.
- Spoon mixture into a baking dish. Bake until set in the centre.
- Serve.
