Pumpkin & Spinach Pasta Bake with

ingredients

  • 1 tub of Vegie Gourmet Chunky Spinach & Garlic Dip
  • 1 cup of ricotta cheese
  • ½ a cup of grated parmesan cheese
  • 1 egg lightly beaten
  • 200g of penne pasta
  • 500g butternut peeled pumpkin

methods

  1. Place the pumpkin in a microwave dish, cover with plastic wrap and cook till soften.
  2. Cook pasta following instruction on pack then drain.
  3. Combine ricotta, egg and parmesan in a large bowl. Stir in Chunky Spinach & Garlic Dip, pasta and pumpkin into the mixture.
  4. Spoon mixture into a baking dish. Bake until set in the centre.
  5. Serve.
