- 1 tub of Vegie Gourmet Lentil Dip
- 2 cups of cooked brown rice
- 1 can of chickpeas, drained
- ½ of cup of chopped coriander
- 30g toasted pine nuts
- 1 cup of diced tomatoes
- Skim yoghurt, to serve
methods
- Combine the brown rice, chickpeas, pine nuts and lentil dip in the bowl.
- Gently toss the tomatoes.
- Garnish with coriander.
- Serve with yoghurt.
