Polenta Stack with

ingredients

  • 1 tub of Vegie Gourmet Lentil Spread
  • 1 cup of polenta
  • 2 cups chicken stock
  • 1 cup of water
  • 20 g butter
  • ½ cup grated parmesan
  • 1 red capsicum, quartered
  • 2 tablespoons oil
  • Rocket leaves to serve

methods

  1. Pour polenta and liquids in a large microwave safe bowl and microwave on high for 5 minutes.
  2. Remove from microwave, stir, and cover with baking paper and return to cook for another 6 minutes.
  3. Stir butter, parmesan into polenta, press into a slice pan and allow cooling before slicing into 8 squares.
  4. On a BBQ hotplate, grill capsicum skin down until blackened. Remove skin and cut into strips
  5. Stack on a plate one piece of polenta followed by a thick layer of Lentil Spread, grilled capsicum, top with rocket leaves. Serve.
