- 1 tub of Vegie Gourmet Lentil Spread
- 1 cup of polenta
- 2 cups chicken stock
- 1 cup of water
- 20 g butter
- ½ cup grated parmesan
- 1 red capsicum, quartered
- 2 tablespoons oil
- Rocket leaves to serve
methods
- Pour polenta and liquids in a large microwave safe bowl and microwave on high for 5 minutes.
- Remove from microwave, stir, and cover with baking paper and return to cook for another 6 minutes.
- Stir butter, parmesan into polenta, press into a slice pan and allow cooling before slicing into 8 squares.
- On a BBQ hotplate, grill capsicum skin down until blackened. Remove skin and cut into strips
- Stack on a plate one piece of polenta followed by a thick layer of Lentil Spread, grilled capsicum, top with rocket leaves. Serve.
