Fish Cakes with Spinach & Garlic with

  • 1 tub of Vegie Gourmet Chunky Spinach & Garlic Dip
  • 3 green onions (shallots) thinly sliced
  • 2 whole eggs lightly whisked
  • 1 cup of breadcrumbs
  • 600g minced skinless fish fillets
  • ¼ teaspoon of salt and pepper

  1. Preheat oven to 220°C. Line a baking tray with baking paper.
  2. Mix all the ingredients in a bowl until uniformed.
  3. Using wet hands form 8 patties and place on the prepared tray.
  4. Bake for 8 minutes until golden brown and serve.
