- ½ a tub of Vegie Gourmet Roasted Tomato Pesto
- 8 corn or wheat tortillas
- ½ cup ricotta
- 1¼ cup grated mozzarella cheese
- 30g (1oz) fetta cheese crumbled
- Fresh basil leaves
methods
1. Preheat the oven to 200°C.
2. Place 4 tortillas on baking trays lined with baking paper.
3. Spread with Roasted Tomato Pesto topped with ricotta, fetta, mozzarella and basil.
4. Sandwich with the remaining tortillas and cut with a sharp knife into diamonds bite size shape.
5. Bake till cheese has melted. Serves 8.
