Party Low Fat Carrot Damper with

ingredients

  • 1 tub of Vegie Gourmet Carrot Spread
  • 3 cups self raising flour
  • 1 teaspoon salt
  • 2 tablespoons of butter at room temperature
  • 1 egg lightly whisked
  • ¼ cup milk
  • ¼ cup grated parmesan cheese
  • ¼ cup chopped fresh sage

methods

  1. Preheat oven to 190°C. Lightly grease or spray baking tray with oil.
  2. Mix the flour, salt and the butter until mixture resembles fine breadcrumbs.
  3. Add milk, egg, Carrot Spread, parmesan (reserve 1tbs) and stir well until mixture forms dough, adding cold water if necessary.
  4. Turn dough onto a lightly floured surface. Knead until smooth then shape into 20cm round circle.
  5. Place on the greased tray and use a sharp knife dipped in flour to mark 8 wedges.
  6. Sprinkle with reserved parmesan and bake for 35 minutes or until golden brown.
